I decided to make some bannock for breakfast and I thought of eating it with some beans! Bannock is a favorite of mine but this time I’m trying it with some dried cranberries. Maybe next time I will share with you my Bannock with Dates!
1 cup flour
¼ cup dried cranberries
2 tsp baking soda
¼ tsp salt
1 tbsp sugar
2 tsp coconut oil
½ cup milk
In a bowl mix all the dried ingredients first. Then add the coconut oil and mix well. Pour the milk and continue until the flour is well mixed thus creating your dough, use your hand if you have to.
Divide the dough into two equal parts for easy cooking as seen in the video. Flatten the dough a bit and you’re ready to cook!
Heat the pan in LOW temperature and lightly grease it. Make sure the pan is hot enough before putting your dough and let it cook for 7 minutes on each side.
This will give you the PERFECT Bannock ever! A little bit crusty on the outside but nice and soft in the inside!
I was using a cast iron pan in the video & the heat was just right!
TIP: Just add a little bit of flour if your dough is too moist. Don’t OVER KNEAD the dough or your bannock will have a hard texture.
