Welcome Folks! Today we will be making our very own Spring Rolls! We call these “Lumpia” in my native homeland, the Philippines. So, let’s get started!
1 ½ lbs ground pork
½ cup fresh flat parsley (chopped)
Salt & pepper to taste
1 tbsp oyster sauce
½ tsp sesame oil
2 green onions (chopped)
2 small boxes of dried raisins (chopped finely)
Spring roll wrappers
1 medium carrot (grated)
Mixture of water & flour (close wrappers’ edges)
Cooking oil (deep frying)
Cook the pork and drain any liquid. Chop or grate some of the ingredients. Then in a big bowl put your cooled pork, veggies & sauces. Mix well.
Now let’s get rolling!
On a flat surface lay the wrapper and start filling it with the prepared mixture; just enough so that you will be able to close the edges and seal the ends with the water & flour mixture.
TIP: Start heating the oil while you’re wrapping to make sure that the oil is super hot before dropping these rolls.
Cooking the Spring Rolls
If you have a deep fryer, that’s good! But if you don’t have one just get yourself a pot that is deep enough so that the oil does not overflow once you start cooking.
Start heating your oil making sure that it’s HOT ENOUGH before putting the rolls so it cooks nice and will not soak in oil.
Drop a few rolls at a time and cook it until they are golden brown. Remove it and place it on a paper towel to absorb any excess oil. Let it cool off and they are ready to be served!
What is a Spring Roll without a sauce? You have many options to serve these beautiful rolls with the following sauce:
#2 Plum Sauce
Mike’s favorite Sauce
2 tbsp light soy sauce
2 tbsp water
2 tbsp vinegar
1 clove garlic (grated)
1 inch peeled ginger (grated)
1 drop sesame oil
1 drop olive oil
1 tsp sambal oelek (spice it up)
