Mike & I love this dessert. We never get tired of eating this simple and easy to make recipe, Date Squares. I think that you will love this!
1 cup pitted dates
½ cup water or more
1 cup flour
½ tsp baking soda
1/8 tsp salt
1 cup softened butter
1 cup brown sugar
2 cups oats
Place the dates and water in a pot. Boil the dates to soften it and smoothen the texture as seen in the video; you are looking for a paste texture and at the same time verifying if there are some seeds to be removed.
While the dates are cooking, mix your dry ingredients. In a big bowl mix the flour, salt, baking soda. Then add the butter until it’s well blended with the flour. Add the oats, brown sugar and mix well.
Divide the mixture into two parts. Grease the baking dish and sprinkle with a bit of flour. Spread half of the mixture and then cover it with the cooked dates (spreading it equally). Add the remaining mixture.
Bake in the oven at 325° for 30 minutes.
