Are you ready for another seafood recipe, here’s another favorite of mine!
2 lbs mussels
1 medium tomato – chopped
1 medium onion – chopped
1 inch ginger – chopped
1 clove garlic – chopped
1 tbsp chopped parsley
1 tsp herbes de provence
Salt & pepper to taste
2-3 tbsp red palm oil or any cooking oil of your choice
1 tbsp fish sauce (optional)
½ cup of broth or water
¼ cup cooking cream 35%
This batch is good for 3-4 people but to be honest there are more shells than the meat so it’s good just for me & Mike! Let’s start!
Wash the mussels two times or more. Remove any fiber that’s hanging on the side and at the same time inspecting each mussel for any chip or cracks. If the mussel is open, chipped or cracked, don’t take a chance. Simply dispose it.
Heat a medium size pan or pot. Pour in the oil & start sautéing the (onions, ginger, garlic, tomatoes) as seen in the video. Cook for a few minutes and add the parsley & tomato paste. Stir for a bit then season with salt & pepper and add the fish sauce.
Bring in the mussels, give it a good stir and cover. Let it cook for 3-4 minutes. Then add the cream & stir. Leave the cover on & let it cook for another 3 minutes. Let it cool off & serve! Great with rice especially with that awesome sauce!
