2 ripe bananas (mashed)

1 ½ cups of fresh or frozen blueberries

2 eggs

¼ cup yogurt or sour cream

1 tsp vanilla

¼ cup melted butter

1 cup sugar

1 tsp baking soda

1 ½ cup all purpose flour


Heat the oven at 350°. Grease the muffin pan or use muffin papers.

In a big bowl mash the bananas. Add in the rest of the liquid ingredients and mix with a beater (mixer). Slowly add the flour; then the baking soda. Mix well & set aside.

Now here’s the fun part! Place the blueberries in the BOTTOM or in the MIDDLE as seen in the video; or on TOP. Bake for 30-35 minutes.

Let it cool off and serve. Makes 10 muffins.

Simple To Make Banana-Blueberry Muffins

Note: Don’t mix the blueberries in the batter using a mixer; it will make a purple batter unless you don’t mind it!
